Celiac disease and dermatitis herpetiformis are two examples of gluten intolerance conditions. A person having gluten intolerance cannot digest the protein part of certain grains, such as wheat, barley, or rye. Ingesting such substances causes damage to the afflicted person’s small intestine. A gluten-free diet stops the irritation of the small intestine, allowing it to heal. Many people experience negative effects of gluten without ever realizing that they are intolerant to gluten.
It may seem that the problem has a simple solution; do not eat grain products. However, a successful gluten-free diet must take into account what is in the food one eats. This is because gluten is added to many different kinds of food. The contents of a gluten-free diet will vary with each patient. Some patients are more sensitive than others. Many people with the condition can tolerate oats, as long as they are processed properly; some cannot. One problem for sensitive individuals is the lack of standardization in food labeling. Some products labeled “gluten-free” have been tested with over 2,000 parts per million of gluten. Life is harder for the gluten-intolerant when they cannot trust their food labels.
